
BEEF STIR FRY FOR FOUR
What you will need:
2 Thin, pan-fry type steaks
Extra Virgin olive oil
6 stalks of celery
6 carrots
Fresh baby corn or 1 can, drained, baby corn
1 container whole mushrooms
1 large wok
1 large bowl
Preparation:
Wash all vegetables.
Slice carrots and celery length-wise. How much you will use will depend upon personal preference.
Slice mushrooms.
Set aside.
Slice beef into 1/4 inch thick, 2 inch long pieces.
Spray wok with cooking spray.
Cooking:
Dump sliced beef into wok and turn heat to medium-high.
With wooden or plastic spatula, frequently turn and stir beef until all pieces are to preferred taste (8 minutes for medium rare).
Remove meat from wok and place into large bowl, covered to keep warm.
Add about 2-3 Tbsp of olive oil to wok.
Add vegetables.
Vegetables are done when carrots are no longer stiff, approximately 15 minutes.
Add beef and stir together until beef is once again hot - not long enough to cook it more.
Sides:
While the vegetables are cooking, the noodles can be prepared.
Salads can be prepared just before the vegetables are done.
If you are a drinker: red wine, merlot. If not: root beer .
